How to make chicken dum biryani
To make chicken dum biryani, you will need the following ingredients:
- 500g chicken, cut into small pieces
- 1 cup basmati rice
- 1 onion, finely sliced
- 1 tomato, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon chili powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric
- 1/2 cup yogurt
- 1/2 cup water
- 1 tablespoon oil
- Salt, to taste
- A few strands of saffron (optional)
- 2 tablespoons ghee (optional)
- Chopped fresh cilantro, for garnish
Here's how to make the biryani:
- Rinse the rice in cold water and soak it for about 20 minutes.
- In a large pan or wok, heat the oil over medium heat. Add the sliced onions and fry until they are golden brown.
- Add the ginger-garlic paste and fry for a minute.
- Add the chicken pieces and cook until they are browned on all sides.
- Add the chopped tomato, chili powder, garam masala, cumin, coriander, and turmeric. Cook for a few minutes until the spices are fragrant.
- Add the yogurt and water to the pan and bring the mixture to a boil.
- Add the soaked and drained rice to the pan and stir gently to combine.
- Reduce the heat to low and cover the pan with a tight-fitting lid.
- Cook the biryani for about 20 minutes or until the rice is tender and the chicken is cooked through.
- If using saffron, soak it in a small bowl of hot water for a few minutes, then mix it into the biryani.
- If using ghee, heat it in a small pan over low heat until melted. Drizzle it over the biryani.
- Garnish the biryani with fresh cilantro and serve hot.
