How to make chicken dum biryani

To make chicken dum biryani, you will need the following ingredients:

  • 500g chicken, cut into small pieces
  • 1 cup basmati rice
  • 1 onion, finely sliced
  • 1 tomato, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric
  • 1/2 cup yogurt
  • 1/2 cup water
  • 1 tablespoon oil
  • Salt, to taste
  • A few strands of saffron (optional)
  • 2 tablespoons ghee (optional)
  • Chopped fresh cilantro, for garnish

Here's how to make the biryani:

  1. Rinse the rice in cold water and soak it for about 20 minutes.
  2. In a large pan or wok, heat the oil over medium heat. Add the sliced onions and fry until they are golden brown.
  3. Add the ginger-garlic paste and fry for a minute.
  4. Add the chicken pieces and cook until they are browned on all sides.
  5. Add the chopped tomato, chili powder, garam masala, cumin, coriander, and turmeric. Cook for a few minutes until the spices are fragrant.
  6. Add the yogurt and water to the pan and bring the mixture to a boil.
  7. Add the soaked and drained rice to the pan and stir gently to combine.
  8. Reduce the heat to low and cover the pan with a tight-fitting lid.
  9. Cook the biryani for about 20 minutes or until the rice is tender and the chicken is cooked through.
  10. If using saffron, soak it in a small bowl of hot water for a few minutes, then mix it into the biryani.
  11. If using ghee, heat it in a small pan over low heat until melted. Drizzle it over the biryani.
  12. Garnish the biryani with fresh cilantro and serve hot.
