Special Mutton biryani recepiy

Ingredients:

  • 1 kg mutton, cut into small pieces
  • 500 g basmati rice
  • 4 onions, finely sliced
  • 2 tablespoons ginger garlic paste
  • 2 tablespoons biryani masala
  • 2 tablespoons garam masala
  • 4 tablespoons oil
  • Salt, to taste
  • 4 cups water
  • A few strands of saffron
  • 1/4 cup milk
  • 1/4 cup ghee
  • A few drops of yellow food coloring (optional)
  • Chopped fresh coriander and mint leaves, for garnish

Instructions:

  1. Wash and soak the rice in water for 20 minutes.
  2. Heat the oil in a large pot over medium heat. Add the onions and fry until golden brown.
  3. Add the ginger garlic paste and fry for another minute.
  4. Add the mutton and fry until it turns brown.
  5. Add the biryani masala, garam masala, and salt, and fry for a few more minutes.
  6. Add the water and bring to a boil. Reduce the heat to low and simmer until the mutton is tender, about 45 minutes to 1 hour.
  7. Drain the rice and add it to the pot with the mutton. Stir gently to mix.
  8. Soak the saffron in the milk for a few minutes.
  9. Add the saffron milk, ghee, and food coloring (if using) to the pot. Stir gently to mix.
  10. Cover the pot with a tight-fitting lid and cook over low heat until the rice is cooked and all the liquid has been absorbed, about 20-25 minutes.
  11. Garnish with the fresh coriander and mint leaves before serving.
