Special Mutton biryani recepiy
Ingredients:
- 1 kg mutton, cut into small pieces
- 500 g basmati rice
- 4 onions, finely sliced
- 2 tablespoons ginger garlic paste
- 2 tablespoons biryani masala
- 2 tablespoons garam masala
- 4 tablespoons oil
- Salt, to taste
- 4 cups water
- A few strands of saffron
- 1/4 cup milk
- 1/4 cup ghee
- A few drops of yellow food coloring (optional)
- Chopped fresh coriander and mint leaves, for garnish
Instructions:
- Wash and soak the rice in water for 20 minutes.
- Heat the oil in a large pot over medium heat. Add the onions and fry until golden brown.
- Add the ginger garlic paste and fry for another minute.
- Add the mutton and fry until it turns brown.
- Add the biryani masala, garam masala, and salt, and fry for a few more minutes.
- Add the water and bring to a boil. Reduce the heat to low and simmer until the mutton is tender, about 45 minutes to 1 hour.
- Drain the rice and add it to the pot with the mutton. Stir gently to mix.
- Soak the saffron in the milk for a few minutes.
- Add the saffron milk, ghee, and food coloring (if using) to the pot. Stir gently to mix.
- Cover the pot with a tight-fitting lid and cook over low heat until the rice is cooked and all the liquid has been absorbed, about 20-25 minutes.
- Garnish with the fresh coriander and mint leaves before serving.
